Week 3

Hope everyone had fun last week playing outside and engaging in physical activity with your kids! We sent you all your packets for the week and you should receive them in a day or so.  For the past week, how was your meal?  What did you like?

We are very excited to announce Week 3: It’s Lunchtime! Over the next week you will receive lots of information on how to pack healthy lunches and what is being served for lunch in schools around the country.

First, please post your picture of your meal and tell us how the past week was.  The more engagement we have from participants the more fun the challenge will be!

If you have any questions, please feel free to post those and we will have our nutritionist, exercise specialist, psychologist, or our Mom of 4 provide insights.  If you feel uncomfortable posting the questions on a blog, please click on feedback and we will respond specifically to you!

    The day started off with big 45 mile bike ride and I wasn’t sure that I would feel up for making dinner. But Salmon, Steak and homemade mac and cheese with a Spinach orange strawberry dressing sounded too good to pass up. So as I was making the Orange, Strawberry dressing the 4 little grandkids thought it was pretty neat that you could squeeze oranges in the manual juice squeezer. After squeezing one orange, they started to go through the refrigerator to find fruit they could squeeze!!! They couldn’t believe orange juice was good to go right from the orange with no sugar added!! But then the lemons started – and all 4 kids on the floor stirring and adding sugar and water – they loved it!

    Meanwhile, we had a great dinner and we all had watered down lemonade as well!!

    My son decided to make nut meat tacos. He had them a month ago when his dad challenged us to a month of eating Raw food. We made the nut meat using soaked raw sunflower seeds, and almonds, and put Mexican seasonings on top and processing it for about 10-15 seconds in the food processor. Then he wanted to use romaine lettuce as the shell. Then he added raw corn, carrots, avocado, and tomato salsa as the toppings. He served fruit on the side. Even our 4 year old ate it up! She wanted two!!

    We received Week Two’s materials in the mail. We definitely made an effort to play kickball outside a few times this week to get some fresh air and have some fun as a family. We also did the “fitness test” that was in the packet. Looking forward to next week!

    We had so much fun! This is our Third week meal (for Sunday, Sept 26). AJ created the menu through “Pick Chow” – FUN! We modified it a bit again to try to make it a little healthier. We were going to modify it in the “Pick Chow” tool, but our weekends are just packed (thus the late night Sunday/Early Monday blog). Soooo we had a lovely meal of Turkey wraps per the recipe on the site. On the side, we had asparagus with garlic sauteed in olive oil, farm-fresh edamame, carrots, and a (super sweet and juicy) peach for dessert. Delicious. Even Dad liked this healthy dinner!
