Week 2

Welcome to the Healthy Meal Challenge!  We sent you all your packets for the week and you should receive them within the next day or so.  For the past week, how was your meal?  What did you like?  I will post the dinner we made with our Grandchildren – they love to play and see what they can make and run out to the garden and find the vegetables!

Let’s get started!  Week 2 is upon us and you will receive lots of information on how to get playing!

Please post your picture of your meal and tell us how the week was.  If you have any questions, please feel free to post those and we will have our nutritionist, exercise specialist,  psychologist, or our Mom of 4 provide insights.  If you feel uncomfortable posting the questions on a blog, please click on feedback and we will respond specifically to you!

    Great dinner! The kids decided they wanted chicken fajita’s made with the vegetables from the garden! So we all went out and pulled carrots, green beans, green peppers, green onions, strawberries and lettuce. We sauteed the chicken, add a little guacomole and sour cream. All the grandchildren loved the meal – of course there were carrots everywhere. After dinner, we went out to the little orchard and picked plums.. I think they must have eaten over 3 each! Yum!

    Similar to Karen, the kids wanted to use veggies from our garden and from our CSA Farm Share. Soo, we had:
    Roasted corn (farm)
    Fresh, raw green beans(farm)
    Fresh, raw carrots (garden)
    Hamburgers on whole grain buns with tomatoes from our garden, lettuce and onions from the farm (pickles, ketchup, mustard)
    Milk/Chocolate milk (although there was some discussion about the fact that ice cream is dairy…
    It was delicious and we all felt great (and very lucky) that it was so fresh.

    I wish I got a photo, but alas, I’m not yet in the ‘groove’…

    Hello! This our second week meal – I think I was supposed to post on Sunday, Sept. 19?? Anyway, we took the ingredients AJ picked and came up with a tasty meal: We had whole grain angel hair pasta tossed with parmesean cheese and reduced fat milk; green beans with garlic sauteed in olive oil; mushrooms sauteed in olive oil; red apples with peanut butter; fresh pineapple for dessert (and lowfat milk to drink)! Yum!
    Thanks for this program – it’s helping us look more carefully at food (and now exercise!). Hooray!

    This is what we had: the hamburger recipe, lettuce, tomato, wheat bun and a glass of whole milk. Everyone ate it and enjoyed it. Izzy created the meal. This week one of my other kids will pick it and I will email you what we thought.I love the idea of your web site and we are receiving the cool stuff in the mail.
